Egg Fettuccine with Roasted Vegetable Pasta Sauce

In general, the smaller the eggplant, the sweeter it will be. If you salt your eggplant and let it sit for a few minutes (or for a few hours) you will help to drain off some of the bitter juices from inside the eggplant. 

Cook Time: 30 mins.

Fresh fettuccine, eggplant, tomatoes, garlic, shallot, asparagus, parmesan, tomato passata, basil + parsley.
