Ginger Pork Udon with Organic Kale

Unlike the leaner tenderloin and chops, pork shoulder is an incredibly forgiving cut of meat. The longer it cooks, the more tender in becomes so even if it stays on the heat a bit too long, it will still be nice and tender. Let it sit at room temperature for about 30 minutes before you get started. Giving the meat a chance to warm up will ensure more even cooking.
